Cured using the same celery powder-base as our bacon, so free from chemical nitrates... and delicious! Ham hocks are great in a pot with beans or greens. They are the lower segment of the pig's back leg that corresponds to the ankle or calf region. Hocks are not fatty but can be made tender from all the collagen that breaks down during cooking.
